SAUSAGE AND SWEET POTATO POT PIES
Preheat oven Electric 200 C/Fan 180 C, Gas 6

Equipment
- chopping board & sharp knife
- grater
- saucepan with lid
- frying pan
- colander
Ingredients
- 200 g sausages
- Cooking oil spray
- 1 onion
- 2 celery sticks
- 1 tin tomatoes chopped
- 75 g frozen peas
- 1 dsp Worcester Sauce
- 400 g Sweet potatoes
- 50 g cheese
- 25 g butter
- 1 tomato
Instructions
- Peel and finely chop onion.
- Wash and finely chop celery.
- Peel and chop potatoes.
- Grate cheese.
- Slice tomato.
- Bring a pan of salted water to boil, add potatoes and cook until soft.
- Spray frying pan and heat.
- Cook sausages for 3 mins, approx.
- Place on chopping board and cut up, divide between 2 serving dishes.
- Spray pan and add onion and celery.
- Sauté for about 4 mins until tender.
- Stir in tinned, chopped tomatoes and bring to boil.
- Add sausages.
- Reduce to simmer.
- Add peas and Worcester sauce.
- Simmer for about 5 mins.
- Mash sweet potato with butter and half cheese.
- Place sausage mixture in serving dishes.
- Top with slice of tomato.
- Top with sweet potato mix.
- Sprinkle over remaining cheese.
- Bake for 20 mins.

I had some sausages which had been lurking in the freezer for a while, so I decided to try this recipe. It was a bit of a faff chopping everything (and I included a courgette which had seen better days!) but the work was totally worth it, it was a delicious meal and I’ve got another meal ready for today.
