SPINACH, LEEK & GRUYERE QUICHE
Oven Electric 220 C/Fan 200 C, Gas 7

- 23cm flan dish
Ingredients
- 6 oz shortcrust pastry
- 1 oz butter
- 6 oz leeks
- 8 oz spinach
- 2 eggs
- ¼ pt double cream
- ¼ pt milk
- 3 oz gruyere cheese
Instructions
- Make pastry and chill for 30 mins
- Line tin and bake blind 15-20 mins, remove paper and beans and bake for further 10 mins
- Finely slice leeks
- Coarsely chop spinach
- Grate cheese
- Melt butter add leeks and cook for 5 mins
- Add spinach and cook for 2 mins
- Spoon into pastry case
- Mix eggs, cream, milk and cheese together
- Season and pour over spinach
- Oven temp Electric 180 C/Fan 160 C, Gas 4
- Bake for 25 mins
