CHICKEN WITH ORZO PASTA
Preheat oven Electric 180 C/Fan 160 C, Gas 4

Equipment
- chopping board & sharp knife
- small dish for coating chicken
- frying pan
- lemon squeezer
Ingredients
- 6 chicken thighs
- 1½ tsp Paprika
- 1 tsp All Spice
- ½ tsp turmeric
- 1 tsp salt
- 1 onion
- 1 carrot
- 1 celery stick
- 4 mushrooms
- 6 cloves of Garlic
- 6 cherry tomatoes
- Juice of 1 lemon
- 250 g orzo
- Handful parsley
- 500 ml chicken stock
Instructions
- Peel and dice onion
- Peel and finely dice carrot
- Dice celery
- Peel garlic, leave whole
- Coat chicken in spices and salt, leave for about 10 mins
- Fry light chicken until lightly brown
- Place on a plate or dish
- Add veg to pan and cook until soft
- Add tomatoes, lemon juice and 100ml of stock
- Add chicken back to pan
- Bring to boil
- Transfer to casserole, cover and cook in oven for 30 mins.
- Add orzo, mix well and parsley. Pour over remaining stock
- Bake, uncovered, for further 20 mins.
