SPINACH, LEEK & GRUYERE QUICHE

Oven Electric 220 C/Fan 200 C, Gas 7

  • 23cm flan dish

Ingredients

  • 6 oz shortcrust pastry
  • 1 oz butter
  • 6 oz leeks
  • 8 oz spinach
  • 2 eggs
  • ¼ pt double cream
  • ¼ pt milk
  • 3 oz gruyere cheese

Instructions

  • Make pastry and chill for 30 mins
  • Line tin and bake blind 15-20 mins, remove paper and beans and bake for further 10 mins
  • Finely slice leeks
  • Coarsely chop spinach
  • Grate cheese
  • Melt butter add leeks and cook for 5 mins
  • Add spinach and cook for 2 mins
  • Spoon into pastry case
  • Mix eggs, cream, milk and cheese together
  • Season and pour over spinach
  • Oven temp Electric 180 C/Fan 160 C, Gas 4
  • Bake for 25 mins
