SPINACH, LEEK & GRUYERE QUICHE
Oven Electric 220 C/Fan 200 C, Gas 7
Servings: 6 people
- 6 oz shortcrust pastry
- 1 oz butter
- 6 oz leeks
- 8 oz spinach
- 2 eggs
- ¼ pt double cream
- ¼ pt milk
- 3 oz gruyere cheese
Make pastry and chill for 30 mins
Line tin and bake blind 15-20 mins, remove paper and beans and bake for further 10 mins
Finely slice leeks
Coarsely chop spinach
Grate cheese
Melt butter add leeks and cook for 5 mins
Add spinach and cook for 2 mins
Spoon into pastry case
Mix eggs, cream, milk and cheese together
Season and pour over spinach
Oven temp Electric 180 C/Fan 160 C, Gas 4
Bake for 25 mins
