PORK WITH BRUSSELS SPROUTS, SWEET POTATO and GRAPES
Preheat oven Electric 220 C/Fan 200 C, Gas 7

- chopping board & sharp knife
- colander
- baking tray
Ingredients
- 300 g sweet potato
- 450 g Brussels sprouts
- 1 small onion
- 2 tbsp rosemary leaves
- 1½ tbsp olive oil
- 320 g (4 x 80 g) pork loin steaks/chops
- 3 tbsp wholegrain mustard
- 300 g red seedless grapes
- Salt & pepper
Instructions
- Wash vegetables and grapes
- Cut sweet potatoes into wedges
- Trim and halve sprouts
- Peel and slice onion
- Combine potatoes, sprouts, onion and 1 tbsp rosemary on baking tray
- Toss with oil and season
- Spread over tray
- Bake 25 mins
- Season pork chops and coat with mustard and rosemary
- Remove baking tray from oven and stir vegetables, clearing 4 spaces for the pork chops
- The chops must be on the tray.
- Add grapes
- Bake for further 15 mins, until chops are ready
