SPICED NUTS
Electric 180 C/Fan 160 C, Gas 4 for about 10 mins before serving

Equipment
- large frying pan
- baking tray
- foil
Ingredients
- 500 g mixed nuts
- 1½ tsp garam masala
- 1 tsp celery salt
- 2 tbsp olive oil
- 2 tbsp light brown sugar
- 3 sprigs rosemary – should make 3 tsps
- Sprinkle of Maldon salt or table salt
Instructions
- Cover baking tray with foil and put it next to the hob
- Warm the frying pan
- Add the nuts and toss around for about 3 mins until lightly toasted
- Add the garam masala and celery salt, push the nuts around so they are evenly coated
- Add oil, sugar and rosemary and mix well
- Continue to heat gently until nuts have darkened slightly and are covered with the sugar and oil
- Tip into baking tray and sprinkle with salt
- Serve garnished with rosemary
- Can be made the day before, store in cool place, warm in moderate oven
