Cover baking tray with foil and put it next to the hob
Warm the frying pan
Add the nuts and toss around for about 3 mins until lightly toasted
Add the garam masala and celery salt, push the nuts around so they are evenly coated
Add oil, sugar and rosemary and mix well
Continue to heat gently until nuts have darkened slightly and are covered with the sugar and oil
Tip into baking tray and sprinkle with salt
Serve garnished with rosemary
Can be made the day before, store in cool place, warm in moderate oven
