SPICED NUTS

Electric 180 C/Fan 160 C, Gas 4 for about 10 mins before serving

Servings: 10 people

Equipment

  • large frying pan
  • baking tray
  • foil

Ingredients

  • 500 g mixed nuts
  • tsp garam masala
  • 1 tsp celery salt
  • 2 tbsp olive oil
  • 2 tbsp light brown sugar
  • 3 sprigs rosemary – should make 3 tsps
  • Sprinkle of Maldon salt or table salt

Instructions

  • Cover baking tray with foil and put it next to the hob
  • Warm the frying pan
  • Add the nuts and toss around for about 3 mins until lightly toasted
  • Add the garam masala and celery salt, push the nuts around so they are evenly coated
  • Add oil, sugar and rosemary and mix well
  • Continue to heat gently until nuts have darkened slightly and are covered with the sugar and oil
  • Tip into baking tray and sprinkle with salt
  • Serve garnished with rosemary
  • Can be made the day before, store in cool place, warm in moderate oven
