PORK WITH BRUSSELS SPROUTS, SWEET POTATO and GRAPES

Preheat oven Electric 220 C/Fan 200 C, Gas 7

Equipment

  • chopping board & sharp knife
  • colander
  • baking tray

Ingredients

  • 300 g sweet potato
  • 450 g Brussels sprouts
  • 1 small onion
  • 2 tbsp rosemary leaves
  • tbsp olive oil
  • 320 g (4 x 80 g) pork loin steaks/chops
  • 3 tbsp wholegrain mustard
  • 300 g red seedless grapes
  • Salt & pepper

Instructions

  • Wash vegetables and grapes
  • Cut sweet potatoes into wedges
  • Trim and halve sprouts
  • Peel and slice onion
  • Combine potatoes, sprouts, onion and 1 tbsp rosemary on baking tray
  • Toss with oil and season
  • Spread over tray
  • Bake 25 mins
  • Season pork chops and coat with mustard and rosemary
  • Remove baking tray from oven and stir vegetables, clearing 4 spaces for the pork chops
  • The chops must be on the tray.
  • Add grapes
  • Bake for further 15 mins, until chops are ready
