PORK WITH BRUSSELS SPROUTS, SWEET POTATO and GRAPES
Preheat oven Electric 220 C/Fan 200 C, Gas 7
Servings: 4 people
- 300 g sweet potato
- 450 g Brussels sprouts
- 1 small onion
- 2 tbsp rosemary leaves
- 1½ tbsp olive oil
- 320 g (4 x 80 g) pork loin steaks/chops
- 3 tbsp wholegrain mustard
- 300 g red seedless grapes
- Salt & pepper
Wash vegetables and grapes
Cut sweet potatoes into wedges
Trim and halve sprouts
Peel and slice onion
Combine potatoes, sprouts, onion and 1 tbsp rosemary on baking tray
Toss with oil and season
Spread over tray
Bake 25 mins
Season pork chops and coat with mustard and rosemary
Remove baking tray from oven and stir vegetables, clearing 4 spaces for the pork chops
The chops must be on the tray.
Add grapes
Bake for further 15 mins, until chops are ready
