CRANBERRY AND WHITE CHOCOLATE COOKIES
Preheat oven Electric 180 C/Fan 160 C, Gas 4

- mixing bowl
- sieve
- electric mixer
- 2 baking trays
- chopping board & knife
Ingredients
- 150 g plain flour
- ½ tsp baking powder
- ½ tsp salt
- 75 g rolled oats
- 125 g soft butter
- 75 g dark brown sugar
- 100 g caster sugar
- 1 egg
- 1 tsp vanilla essence
- 75 g dried cranberries
- 50 g pecan nuts
- 150 g white chocolate chips
Instructions
- Roughly chop pecan nuts
- Cream butter with the sugars – use mixer
- Beat in egg and vanilla essence
- Beat in sieved flour, oats, salt and baking powder.
- Fold in cranberries, pecans and chocolate chips
- Roll into balls, flatten with fork
- Bake for 15 mins, should be tinged with gold, but too soft to remove from try immediately.
- Leave to cool for about 5 mins then lift off with a spatula
- Store in airtight tin
