HONEYED FIG VINEGAR
2 x 500 ml sealable bottles to serve vinegar

Equipment
- large vinegar proof jar
- chopping board & knife
- muslin
- funnel
Ingredients
- 1 litre white wine vinegar
- 250 g soft dried figs
- 75 g runny honey
- 2 tsp dried thyme
- 1 tsp white peppercorns
Instructions
- Sterilise large jar
- Chop figs, fairly fine
- Pour the vinegar into large jar
- Add figs, honey, thyme and peppercorns.
- Seal tightly and shake
- Leave for 4 days – it will look a bit peculiar
- Store in a dark place
- Strain through muslin, taking care to remove thyme
- Pour into bottles, seal and label
- 10. Store in a cool, dark place
- 11. Use within a year
