Roughly chop pecan nuts
Cream butter with the sugars – use mixer
Beat in egg and vanilla essence
Beat in sieved flour, oats, salt and baking powder.
Fold in cranberries, pecans and chocolate chips
Roll into balls, flatten with fork
Bake for 15 mins, should be tinged with gold, but too soft to remove from try immediately.
Leave to cool for about 5 mins then lift off with a spatula
Store in airtight tin
