CRANBERRY AND WHITE CHOCOLATE COOKIES

Preheat oven Electric 180 C/Fan 160 C, Gas 4

Equipment

  • mixing bowl
  • sieve
  • electric mixer
  • 2 baking trays
  • chopping board & knife

Ingredients

  • 150 g plain flour
  • ½ tsp baking powder
  • ½ tsp salt
  • 75 g rolled oats
  • 125 g soft butter
  • 75 g dark brown sugar
  • 100 g caster sugar
  • 1 egg
  • 1 tsp vanilla essence
  • 75 g dried cranberries
  • 50 g pecan nuts
  • 150 g white chocolate chips

Instructions

  • Roughly chop pecan nuts
  • Cream butter with the sugars – use mixer
  • Beat in egg and vanilla essence
  • Beat in sieved flour, oats, salt and baking powder.
  • Fold in cranberries, pecans and chocolate chips
  • Roll into balls, flatten with fork
  • Bake for 15 mins, should be tinged with gold, but too soft to remove from try immediately.
  • Leave to cool for about 5 mins then lift off with a spatula
  • Store in airtight tin
