CHILLED LEMON FLAN

Ingredients
- 100 g butter
- 200 g ginger biscuits
- ½ large tin Condensed Milk
- ¼ pt double cream
- 2 lemons
Instructions
- Crush biscuits in plastic bag with rolling pin
- Melt butter and stir biscuits.
- Press into flan dish
- Take rind and juice from lemons and place in mixing bowl
- Gradually whisk in condensed milk using a fork and balloon whisk
- Gradually whisk in cream
- Pour onto biscuit base
- Chill (best chilled overnight for intense flavour)
- Decorate with whipped cream
