CHILLED LEMON FLAN

Servings: 8 people

Ingredients

  • 100 g butter
  • 200 g ginger biscuits
  • ½ large tin Condensed Milk
  • ¼ pt double cream
  • 2 lemons

Instructions

  • Crush biscuits in plastic bag with rolling pin
  • Melt butter and stir biscuits.
  • Press into flan dish
  • Take rind and juice from lemons and place in mixing bowl
  • Gradually whisk in condensed milk using a fork and balloon whisk
  • Gradually whisk in cream
  • Pour onto biscuit base
  • Chill (best chilled overnight for intense flavour)
  • Decorate with whipped cream
