BAILEYS CHOCOLATE CHEESECAKE

Equipment
- pan
- plastic bag & rolling pin
- 2 med bowls or jug to melt chocolate
- mixing bowl
- whisk
- 8 inch approx. springform tin (or flan dish if you prefer)
Ingredients
- 100 g butter
- 250 g digestive biscuits
- 100 g chocolate
- 50 ml double cream
- 150 g white chocolate
- 100 ml Baileys or other cream liqueur
- 250 g Philadelphia light cream cheese
Instructions
- Crush biscuits
- Melt butter.
- Stir in biscuits and press into tin/dish. Chill
- Melt plain chocolate
- Add double cream and mix well.
- Melt white chocolate
- Mix white and dark chocolate together
- Slowly add Baileys
- Whisk cream cheese in the larger bowl and slowly add the chocolate mixture
- Beat until smooth and fluffy.
- Pour into cake tin, level out.
- Chill for at least 4 hours or overnight
- Serve with a swirl of cream and dusting of cocoa
