CHRISTMAS ROCKY ROAD

Equipment

  • pan
  • rolling pin
  • chopping board & sharp knife
  • 2 plastic bags
  • baking tin/foil tray (9¼"x 12")

Ingredients

  • 250 g dark chocolate
  • 150 g milk chocolate
  • 175 g soft butter
  • 4 tbsp golden syrup
  • 200 g amaretti biscuits
  • 150 g brazil nuts
  • 150 g glace cherries
  • 125 g mini marshmallows
  • 1 tbsp icing sugar – to sprinkle over when serving

Instructions

  • Put biscuits in plastic bag and bash with rolling pin to get big and little sizes crumbs
  • Put brazil nuts into plastic bag and bash to get different sized nut rubble
  • Chop chocolate and put into pan with butter and syrup
  • Melt, stirring all the time, over a low heat
  • Take off the heat
  • Stir in biscuits and nuts
  • Add cherries and marshmallows
  • Stir really well to coat everything in chocolate
  • Tip into tin/tray and chill for about 6 hours then cut into pieces and store in airtight tin
