ORANGE YOGURT CAKE
Preheat oven Electric 180C, Fan 160C, Gas 4
Servings: 8 people
- 110 g butter
- 110 g golden caster sugar
- 2 eggs
- 175 g SR flour
- 150 g natural yogurt
- 3 oranges
- 10 sugar cubes
Take the zest from 2 oranges
Cream butter and sugar until light and fluffy
Gradually beat in eggs
Stir in flour, yogurt, and the zest of 2 oranges.
Bake for 30-35mins
Leave to cool
Take zest from remaining orange and take juice from the 3 oranges
Put juice, zest and 4 sugar cubes into pan, bring to the boil and simmer for about 5mins or until syrupy.
Crush remaining cubes
Drizzle syrup over the cake and sprinkle over sugar
