ORANGE YOGURT CAKE

Preheat oven Electric 180C, Fan 160C, Gas 4
Servings: 8 people

Equipment

  • 2lb loaf tin, greased and lined
  • mixing bowl
  • electric mixer
  • sieve
  • grater/zester
  • juice extractor
  • small pan

Ingredients

  • 110 g butter
  • 110 g golden caster sugar
  • 2 eggs
  • 175 g SR flour
  • 150 g natural yogurt
  • 3 oranges
  • 10 sugar cubes

Instructions

  • Take the zest from 2 oranges
  • Cream butter and sugar until light and fluffy
  • Gradually beat in eggs
  • Stir in flour, yogurt, and the zest of 2 oranges.
  • Bake for 30-35mins
  • Leave to cool
  • Take zest from remaining orange and take juice from the 3 oranges
  • Put juice, zest and 4 sugar cubes into pan, bring to the boil and simmer for about 5mins or until syrupy.
  • Crush remaining cubes
  • Drizzle syrup over the cake and sprinkle over sugar
