ORANGE YOGURT CAKE
Preheat oven Electric 180C, Fan 160C, Gas 4

Equipment
- 2lb loaf tin, greased and lined
- mixing bowl
- electric mixer
- sieve
- grater/zester
- juice extractor
- small pan
Ingredients
- 110 g butter
- 110 g golden caster sugar
- 2 eggs
- 175 g SR flour
- 150 g natural yogurt
- 3 oranges
- 10 sugar cubes
Instructions
- Take the zest from 2 oranges
- Cream butter and sugar until light and fluffy
- Gradually beat in eggs
- Stir in flour, yogurt, and the zest of 2 oranges.
- Bake for 30-35mins
- Leave to cool
- Take zest from remaining orange and take juice from the 3 oranges
- Put juice, zest and 4 sugar cubes into pan, bring to the boil and simmer for about 5mins or until syrupy.
- Crush remaining cubes
- Drizzle syrup over the cake and sprinkle over sugar
