Peel and dice onion
Peel and finely dice carrot
Dice celery
Peel garlic, leave whole
Coat chicken in spices and salt, leave for about 10 mins
Fry light chicken until lightly brown
Place on a plate or dish
Add veg to pan and cook until soft
Add tomatoes, lemon juice and 100ml of stock
Add chicken back to pan
Bring to boil
Transfer to casserole, cover and cook in oven for 30 mins.
Add orzo, mix well and parsley. Pour over remaining stock
Bake, uncovered, for further 20 mins.
