CHICKEN WITH ORZO PASTA

Preheat oven Electric 180 C/Fan 160 C, Gas 4
Servings: 6 people

Equipment

  • chopping board & sharp knife
  • small dish for coating chicken
  • frying pan
  • lemon squeezer

Ingredients

  • 6 chicken thighs
  • tsp Paprika
  • 1 tsp All Spice
  • ½ tsp turmeric
  • 1 tsp salt
  • 1 onion
  • 1 carrot
  • 1 celery stick
  • 4 mushrooms
  • 6 cloves of Garlic
  • 6 cherry tomatoes
  • Juice of 1 lemon
  • 250 g orzo
  • Handful parsley
  • 500 ml chicken stock

Instructions

  • Peel and dice onion
  • Peel and finely dice carrot
  • Dice celery
  • Peel garlic, leave whole
  • Coat chicken in spices and salt, leave for about 10 mins
  • Fry light chicken until lightly brown
  • Place on a plate or dish
  • Add veg to pan and cook until soft
  • Add tomatoes, lemon juice and 100ml of stock
  • Add chicken back to pan
  • Bring to boil
  • Transfer to casserole, cover and cook in oven for 30 mins.
  • Add orzo, mix well and parsley. Pour over remaining stock
  • Bake, uncovered, for further 20 mins.
