WHITE CHOCOLATE TRUFFLES

Ingredients
- 100 g White Chocolate
- 1 tbsp Double Cream
- 1 tbsp Apricot Jam
- 100 g Apricots no need to soak
- 50 g Cake crumbs
- 50 g Icing Sugar
DECORATE
- 150 g White Chocolate
Instructions
- Chop Apricots
- Crumb cake
- Sieve icing sugar
- Melt 4 oz white chocolate
- Stir in cream, jam, apricots, cake crumbs and icing sugar.
- Mix well.
- Form into balls
- Melt chocolate (6oz)
- Dip the apricot balls into the chocolate.
- Place on non stick paper
- Leave until set
- Place in sweet cases and chill
