CREPES SUZETTES

Equipment

  • mixing bowl
  • zester
  • grater
  • whisk
  • jug
  • frying pan
  • lemon squeezer
  • sieve
  • Greaseproof paper

Ingredients

  • 100 g plain flour
  • Pinch salt
  • ½ orange rind
  • 1 egg
  • ½ pt milk
  • Butter/oil to fry pancakes
  • Ingredients for sauce
  • 50 g butter
  • 2 tbsp orange liqueur
  • 1 orange rind & juice
  • 25 g sugar
  • 3 tbsp brandy or rum

Instructions

  • Sieve flour into bowl
  • Take rind from orange from half of one of the oranges
  • Add rind to flour
  • Make a well in the centre and add egg
  • Whisk in milk, gradually until smooth
  • Pour into jug and leave to stand for at least 15 mins
  • Make pancakes and place on greaseproof
  • When cold layer with greaseproof and freeze until needed
  • TO COMPLETE -remove pancakes from freezer
  • Make orange sauce – melt butter in large frying pan
  • Remove from heat add orange rind, juice, liqueur, and sugar
  • Heat gently to dissolve the sugar, then remove from heat
  • Place pancake in the sauce, folding in half and then into quarters.
  • Repeat with remaining pancakes, overlapping
  • Return to heat and slowly bring to boil
  • Warm rum/brandy in a ladle, set alight with a match and pour over pancakes
  • Serve immediately with cream or ice cream
