Sieve flour into bowl
Take rind from orange from half of one of the oranges
Add rind to flour
Make a well in the centre and add egg
Whisk in milk, gradually until smooth
Pour into jug and leave to stand for at least 15 mins
Make pancakes and place on greaseproof
When cold layer with greaseproof and freeze until needed
TO COMPLETE -remove pancakes from freezer
Make orange sauce – melt butter in large frying pan
Remove from heat add orange rind, juice, liqueur, and sugar
Heat gently to dissolve the sugar, then remove from heat
Place pancake in the sauce, folding in half and then into quarters.
Repeat with remaining pancakes, overlapping
Return to heat and slowly bring to boil
Warm rum/brandy in a ladle, set alight with a match and pour over pancakes
Serve immediately with cream or ice cream
