Place the tray close to the cooker
Put sugar, water and syrup into pan
Bring gently to the boil
Turn up the heat and boil for 10 mins, it will be smoking.
Take the pan off the heat, using a wooden spoon, stir in the nuts, vanilla, butter and bicarbonate of soda.
This should be a golden, frothy, hot and gooey mixture
Pour quickly onto foil, use the spoon to help spread it out
Leave to cool
Break into pieces and store in an airtight tin
10. Store in a dry place
11. Use within 7-10 days
