PEANUT BRITTLE

- baking tray covered in buttered foil
Ingredients
- 200 g caster sugar
- 60 ml water
- 150 g golden syrup
- 150 salted nuts
- 1½ tsp vanilla extract
- 25 g soft butter
- 1¼ tsp bicarbonate soda
Instructions
- Place the tray close to the cooker
- Put sugar, water and syrup into pan
- Bring gently to the boil
- Turn up the heat and boil for 10 mins, it will be smoking.
- Take the pan off the heat, using a wooden spoon, stir in the nuts, vanilla, butter and bicarbonate of soda.
- This should be a golden, frothy, hot and gooey mixture
- Pour quickly onto foil, use the spoon to help spread it out
- Leave to cool
- Break into pieces and store in an airtight tin
- 10. Store in a dry place
- 11. Use within 7-10 days
