HONEYED FIG VINEGAR

2 x 500 ml sealable bottles to serve vinegar

Equipment

  • large vinegar proof jar
  • chopping board & knife
  • muslin
  • funnel

Ingredients

  • 1 litre white wine vinegar
  • 250 g soft dried figs
  • 75 g runny honey
  • 2 tsp dried thyme
  • 1 tsp white peppercorns

Instructions

  • Sterilise large jar
  • Chop figs, fairly fine
  • Pour the vinegar into large jar
  • Add figs, honey, thyme and peppercorns.
  • Seal tightly and shake
  • Leave for 4 days – it will look a bit peculiar
  • Store in a dark place
  • Strain through muslin, taking care to remove thyme
  • Pour into bottles, seal and label
  • 10. Store in a cool, dark place
  • 11. Use within a year
