HONEYED FIG VINEGAR
2 x 500 ml sealable bottles to serve vinegar
Servings: 4 people
large vinegar proof jar
chopping board & knife
muslin
funnel
- 1 litre white wine vinegar
- 250 g soft dried figs
- 75 g runny honey
- 2 tsp dried thyme
- 1 tsp white peppercorns
Sterilise large jar
Chop figs, fairly fine
Pour the vinegar into large jar
Add figs, honey, thyme and peppercorns.
Seal tightly and shake
Leave for 4 days – it will look a bit peculiar
Store in a dark place
Strain through muslin, taking care to remove thyme
Pour into bottles, seal and label
10. Store in a cool, dark place
11. Use within a year
