CAULIFLOWER WITH GARLIC
Preheat oven, Electric 190 C/Fan 170 C, Gas 5
Servings: 4 people
- 1 small cauliflower
- small onion
- 1 clove garlic
- 2 rashers bacon
- 50 g butter
- 2 tbsp oil
- 2 tbsp chopped parsley
- 2 tbsp fresh breadcrumbs
Finely chop onion
Dice bacon
Peel and crush garlic
Break cauliflower into florets and cook in boiling water for 4 mins
Drain well
Melt 1oz butter and oil, add bacon and onion. Cook for 5 mins
Add garlic and mix well
Stir in remaining butter, breadcrumbs and parsley
Place cauliflower in casserole dish, top with breadcrumb mixture
Cover and bake for 10 mins
Remove cover and cook for further 5 mins
