CHRISTMAS SPICED FRUIT CHUTNEY

Equipment

  • 4 x 1lb/450g jam jars – sterilised
  • chopping board & sharp knife
  • large pan
  • lemon squeezer
  • garlic crusher
  • grater
  • jug

Ingredients

  • 225 g no-soak dried dates
  • 350 g no soak dried apricots
  • 2 red apples
  • 125 g sultanas
  • 450 g red onions
  • 3 cloves garlic
  • 2 red peppers
  • 1 lemon
  • 1 orange
  • 1 tsp allspice
  • ½ inch piece fresh ginger
  • 1 cinnamon stick
  • 2 cloves
  • 175 ml white wine vinegar
  • 175 ml raspberry vinegar
  • Salt & pepper
  • 450 g soft light brown sugar

Instructions

  • Roughly chop dates and apricots
  • Core, peel and roughly chop apples
  • Deseed and roughly chop peppers
  • Peel and roughly chop onions
  • Peel and crush garlic
  • Take juice from lemon 1 tablespoonful only
  • Take zest from orange
  • Peel and grate ginger
  • Put all fruit and vegetables into large pan, add lemon juice, orange zest and spices
  • Soften over gentle heat for approx. 10 mins
  • Add vinegar and season
  • Bring to the boil and simmer for 15 mins
  • Add sugar and stir until dissolved
  • Simmer for 1 hour, until thick and a clear trail forms when a spoon is pulled through
  • Remove cinnamon stick and pour into jars.
  • Cover and seal
  • Use within 3 months
