CHRISTMAS SPICED FRUIT CHUTNEY

Ingredients
- 225 g no-soak dried dates
- 350 g no soak dried apricots
- 2 red apples
- 125 g sultanas
- 450 g red onions
- 3 cloves garlic
- 2 red peppers
- 1 lemon
- 1 orange
- 1 tsp allspice
- ½ inch piece fresh ginger
- 1 cinnamon stick
- 2 cloves
- 175 ml white wine vinegar
- 175 ml raspberry vinegar
- Salt & pepper
- 450 g soft light brown sugar
Instructions
- Roughly chop dates and apricots
- Core, peel and roughly chop apples
- Deseed and roughly chop peppers
- Peel and roughly chop onions
- Peel and crush garlic
- Take juice from lemon 1 tablespoonful only
- Take zest from orange
- Peel and grate ginger
- Put all fruit and vegetables into large pan, add lemon juice, orange zest and spices
- Soften over gentle heat for approx. 10 mins
- Add vinegar and season
- Bring to the boil and simmer for 15 mins
- Add sugar and stir until dissolved
- Simmer for 1 hour, until thick and a clear trail forms when a spoon is pulled through
- Remove cinnamon stick and pour into jars.
- Cover and seal
- Use within 3 months
