BASIC BREAD DOUGH

Equipment

  • mixing bowl
  • baking tray
  • sieve
  • small bowl
  • jug

Ingredients

  • 1 lb Strong Plain Flour
  • 1 tsp salt
  • 1 oz Fresh Yeast (25g)
  • ½ tsp sugar
  • 1 oz lard (25g)

Instructions

  • Place yeast and sugar in a small bowl or jug.
  • Add 5 fl oz (¼ pint) LUKE warm water.
  • Mix and leave to froth
  • Sieve flour and salt into a bowl.
  • Rub in lard.
  • Make a ‘well’ in the centre. Pour in the yeast mixture.
  • Mix, using a wooden spoon, add more warm water if needed to make a soft, not sticky dough.
  • Beat with wooden spoon until the mixture is smooth.
  • Cover with cling film/tea towel and leave to double in size.
  • Knead lightly until smooth (a good 5 mins or more, take care not to add too much flour!)
  • This dough is now ready for use.
