Peel and finely chop onion
Peel and crush garlic
Wipe and thickly slice mushrooms
Grate cheese
Cook the pasta according to the instructions on the packet in boiling salted water
Drain and rinse with cold water
Melt the butter in a frying pan and cook the onion for about 4-5 mins
Turn the heat down and cover the pan with a lid
Leave for about 10 mins
Remove the lid
Add garlic and mushrooms
Increase the heat and cook for 4-6 mins
Season
Tip the drained pasta into the pan
Pour in the cream and mix well
Add the Parmesan and chives
Check seasoning
Pour into a casserole dish
Sprinkle over the Cheddar cheese and a little paprika
Bake for 30 mins, serve immediately
