GARLIC MUSHROOM AND PENNE PASTA

Ingredients
- 300 g/11oz penne pasta
- 25 g/1oz butter
- 1 onion
- 2 cloves garlic
- 500 g/1lb2oz mixed mushrooms including chestnut
- 200 ml/7floz double cream
- 50 g/2oz Parmesan cheese
- 2 tbsp snipped chives
- 75 g/3oz mature Cheddar cheese
- Paprika for dusting
- Salt and pepper
- 2 litre/3½pt casserole dish
Instructions
- Peel and finely chop onion
- Peel and crush garlic
- Wipe and thickly slice mushrooms
- Grate cheese
- Cook the pasta according to the instructions on the packet in boiling salted water
- Drain and rinse with cold water
- Melt the butter in a frying pan and cook the onion for about 4-5 mins
- Turn the heat down and cover the pan with a lid
- Leave for about 10 mins
- Remove the lid
- Add garlic and mushrooms
- Increase the heat and cook for 4-6 mins
- Season
- Tip the drained pasta into the pan
- Pour in the cream and mix well
- Add the Parmesan and chives
- Check seasoning
- Pour into a casserole dish
- Sprinkle over the Cheddar cheese and a little paprika
- Bake for 30 mins, serve immediately
