BAILEYS CHOCOLATE CHEESECAKE

Equipment

  • pan
  • plastic bag & rolling pin
  • 2 med bowls or jug to melt chocolate
  • mixing bowl
  • whisk
  • 8 inch approx. springform tin (or flan dish if you prefer)

Ingredients

  • 100 g butter
  • 250 g digestive biscuits
  • 100 g chocolate
  • 50 ml double cream
  • 150 g white chocolate
  • 100 ml Baileys or other cream liqueur
  • 250 g Philadelphia light cream cheese

Instructions

  • Crush biscuits
  • Melt butter.
  • Stir in biscuits and press into tin/dish. Chill
  • Melt plain chocolate
  • Add double cream and mix well.
  • Melt white chocolate
  • Mix white and dark chocolate together
  • Slowly add Baileys
  • Whisk cream cheese in the larger bowl and slowly add the chocolate mixture
  • Beat until smooth and fluffy.
  • Pour into cake tin, level out.
  • Chill for at least 4 hours or overnight
  • Serve with a swirl of cream and dusting of cocoa
