TURKEY SCOTCH EGGS
Preheat oven Electric 200 F/Fan 180 C, Gas 6

- 3 small, shallow bowls
- frying pan
- garlic crusher
- baking tray
Ingredients
- 5 Eggs
- 250 g minced turkey
- Small onion
- 2 tbsp plain flour
- Panko breadcrumbs
- 1 clove garlic
- 2 sprigs thyme
- 2 sprigs rosemary
- 2 sprigs parsley
- 1 tbsp oil
- Salt & pepper
Instructions
- Hard boil 4 eggs
- Peel and finely chop onion and place in mixing bowl
- Peel and crush garlic
- Strip herbs and chop
- Add turkey and mix well together, season
- Beat egg into one small bowl
- Put flour in small bowl
- Put a little Panko crumbs into another bowl
- Divide turkey into 4 amounts
- Flatten and wrap around egg
- Complete all eggs
- Roll in flour
- Roll in beaten egg
- Coat with panko crumbs
- Chill for about 30-45 mins
- Heat oil in pan and brown eggs, put onto baking tray
- Bake for 15 – 20 mins, serve hot or cold
