ITALIAN CHICKEN
Pre heat oven Electric 190 C / Fan 170 C, Gas 5

Ingredients
- ½ tbsp oil Fry Light spray
- 4 chicken breasts
- 2 rashers bacon
- 1 onion
- 2 cloves garlic
- 100 g 4oz mushrooms
- 14 oz tin chopped tomatoes
- 1½ tsp dried Basil or 1tbsp fresh Basil
- 1 tbsp fresh Parsley
- 6 floz red wine
- Salt & Pepper
- Parmesan or other strong cheese to serve
Instructions
- Cut bacon into small pieces
- Peel and slice onion
- Peel and crush garlic
- Wipe and slice mushrooms
- Heat oil in frying pan, add chicken and brown
- Place in casserole dish
- Add bacon and onions to pan and sauté for 3-4 mins
- Add garlic and sauté for 2 mins
- Add mushrooms, cook 2-3mins
- Stir in tomatoes, wine and herbs
- Allow to boil
- Season and pour over chicken
- Cover tightly and bake for about 1 hour 15 mins
- Sprinkle over cheese when serving
- Serve with green vegetables, jacket, new potatoes or pasta and garlic bread
