CHICKEN OR TURKEY ROLL
Preheat oven Electric 190 C/Fan 170 C, Gas 5

Equipment
- chopping board & sharp knife
- frying pan
- mixing bowl
Ingredients
- 4 chicken or turkey breasts
- 250 g smoked streaky bacon
- 2 tbsp cranberry jelly
- 2 onions
- 2 tsp sage
- 100 g breadcrumbs
- 200 g sausage meat
- 1 egg
- 1 tbsp oil
- Salt & pepper
Instructions
- Peel and dice onion
- Heat oil and gently cook onion
- Add sage and leave to cool
- Place sausage meat in mixing bowl, beat in onion and breadcrumbs
- Bind with egg. Season and mix well
- Using a rolling pin flatten chicken/turkey to¼ inch
- Take a large piece of foil
- Lay bacon over foil
- Arrange chicken/turkey on top
- Spread over cranberry jelly
- Spread stuffing over meat
- Roll up tightly using the foil
- Bake for 1 hour – check temp, pull back foil and allow bacon to brown
- Cook for further 15mins
Freeze at end of Stage 12, Defrost fully before cooking
