BOMBAY POTATOES

  • grater
  • garlic crusher
  • pan with lid
  • chopping board & sharp knife

Ingredients

  • 1 tbsp oil
  • 400 g New potatoes
  • 1 onion
  • Small piece grated ginger
  • 2 cloves garlic
  • 1 tsp gram masala
  • 1 tsp ground cumin
  • Half tsp ground coriander
  • 1 tin chopped tomatoes
  • Salt and pepper

Instructions

  • Peel and finely chop onion
  • Peel and crush garlic
  • Peel and grate ginger
  • Wash potatoes and cut into cubes
  • Heat oil and add onion
  • Cook for 2-3mins
  • Stir in spices, garlic and ginger
  • Stir in potatoes and cook for 2-3 mins
  • Add tomatoes and season
  • Cover and cook until potatoes are tender
  • Cook onion, add spices, add toms, add to potatoes
