PINK PICKLED ONIONS

Course: Side Dish
Servings: 6 people

Equipment

  • jug
  • pan for vinegar
  • pan for onions
  • colander
  • chopping board & sharp knife

Ingredients

  • 200 ml white wine vinegar
  • 50 g caster sugar
  • 6 black peppercorns
  • 3 cloves
  • ¼ tsp crushed chillies
  • 2 bay leaves
  • 1 star anise
  • 3 pink onions

Instructions

  • Peel and thinly slice onions
  • Put pan of water to boil
  • Put vinegar, sugar, peppercorns and spices into small pan.
  • Heat gently until sugar is dissolved
  • Simmer for 2 mins and remove from heat.
  • Put onions into boiling water.
  • Boil for 1 minute
  • Drain well and leave to cool slightly
  • Pack into jar and pour over vinegar
  • Cool completely, make sure it is sealed.
  • Store chilled.
