DIJON MUSTARD AND ORANGE MARMALADE CHICKEN

Preheat oven Electric 180 C/Fan 160 C, Gas 4

Equipment

  • casserole dish

  • whisk

Ingredients

  • 4 tbsp Orange Marmalade
  • 2 tsp Dijon mustard
  • 50 ml orange juice
  • 1 tbsp oil
  • 4 chicken thighs

Instructions

  • Mix marmalade, mustard, orange juice and oil together
  • Pour over chicken and leave to marinade for about 30 - 40 mins
  • Cover tightly and bake for 40 - 50 mins
  • Turnover and baste with juices
  • Cook, uncovered for further 20 - 30 mins, check thighs are fully cooked.
  • Turn chicken in sauce at intervals
  • Serve with jacket potato, green vegetable, or rice
