APPLE TRAYBAKE
Preheat oven, Electric 180 C / Fan 160 C, Gas 4

27x20cm rectangular tin, greased and lined – if you have a slightly larger tin it will be fine but the cake will cook more quickly
- 450 g Bramley Apples
- ½ lemon
- 280 g golden caster sugar
- 225 g soft butter/margarine
- 4 eggs
- 2 tsp vanilla extract
- 350 g SR Flour
- 2 tsp baking powder
- 3 tbsp milk
- 2 tbsp demerara sugar
Peel, core and thinly slice apple, toss in the juice of the half lemon
Beat butter and sugar until soft
Add flour, baking powder, eggs and essence.
Beat until smooth, add milk to ensure ‘dropping consistency’
Put a thin layer of cake mixture in tin, arrange a layer of apple slices on top
Spread over a thin layer of cake mixture and then top with apple slices
Cover with remaining cake mixture and sprinkle with brown sugar
Bake for 45-50 mins
