APPLE TRAYBAKE

Preheat oven, Electric 180 C / Fan 160 C, Gas 4

Equipment

  • chopping board and sharp knife
  • lemon squeezer
  • mixing bowl
  • sieve
  • small bowl
  • mixer
  • 27x20cm rectangular tin, greased and lined – if you have a slightly larger tin it will be fine but the cake will cook more quickly

Ingredients

  • 450 g Bramley Apples
  • ½ lemon
  • 280 g golden caster sugar
  • 225 g soft butter/margarine
  • 4 eggs
  • 2 tsp vanilla extract
  • 350 g SR Flour
  • 2 tsp baking powder
  • 3 tbsp milk
  • 2 tbsp demerara sugar

Instructions

  • Peel, core and thinly slice apple, toss in the juice of the half lemon
  • Beat butter and sugar until soft
  • Add flour, baking powder, eggs and essence.
  • Beat until smooth, add milk to ensure ‘dropping consistency’
  • Put a thin layer of cake mixture in tin, arrange a layer of apple slices on top
  • Spread over a thin layer of cake mixture and then top with apple slices
  • Cover with remaining cake mixture and sprinkle with brown sugar
  • Bake for 45-50 mins
