MINCED BEEF & SWEET POTATO STEW

Ingredients
- 1 tbsp oil
- 1 large onion
- 1 large carrot
- 1 stick celery
- 500 g lean minced beef
- 1 tbsp tomato puree
- 1 tbsp mushroom ketchup or Worcestershire sauce
- 400 g tin chopped tomatoes
- 450 g sweet potatoes
- Few sprigs thyme
- 1 bay leaf
- Handful chopped parsley
Instructions
- Peel and chop onion
- Peel and chop carrot
- Slice celery
- Peel and cut sweet potato into chunks
- Pour oil into pan, add carrot, onion and celery. Sweat for 10 mins.
- Add beef and cook, stirring all the time until the meat changes colour
- Add tomato puree, mushroom ketchup, tomatoes, sweet potato, thyme, bay leaf and a can of water.
- Bring to boil then turn down to simmer over a low heat.
- Stir at intervals. Cook until potatoes are tender
- Remove bay leaf and serve with green vegetables
