FRAGRANT TOMATO CHICKEN TAGINE

Ingredients
- 2 tsp oil
- 1 onion
- 1 clove garlic
- 1 tsp root ginger
- 1 tbsp tomato puree
- ½ tsp smoked paprika
- ½ tsp ground cumin
- ½ tsp ground cinnamon
- 200 g skinless and boneless thighs
- 250 g butternut squash
- 2 dried apricots
- ½ Lemon
- Coriander
- 15 g toasted almonds
Instructions
- Finely chop onion, peel and crush garlic and ginger
- Peel and dice butternut squash
- Take zest and juice from lemon
- Cut up apricots
- Heat 2 tsp oil, add onion, garlic, ginger, salt & pepper. Cook for 10 mins
- Add tomato puree, spices and cook for 2 mins
- Stir in chicken and butternut squash
- Stir in apricots, lemon juice and zest, some coriander, 150 ml water.
- Simmer and cook for 40 mins.
- Serve with rice or couscous sprinkle over almonds and remaining coriander
