BROAD BEAN MINESTRONE SOUP

Ingredients
- 1 tbsp vegetable oil
- 55 g smoked bacon
- 200 g onions
- 2 sticks celery
- 200 g carrots
- 1 bay leaf
- 1 pt chicken stock
- Salt & Pepper
- 70 g pasta (small or break up spaghetti
- 140 g broad beans
- 140 g green beans
- 55 g cabbage
- 4 tsp green pesto
- Fresh basil and Parmesan to serve
Instructions
- Dice bacon
- Peel and chop onions, celery and carrots
- Heat oil and add the bacon. Cook for 5 mins
- Add onions, celery and carrot.
- Fry for about 10 mins, keep stirring
- Add bay leaf and stock, cover and simmer for about 20 mins or until vegetables are soft.
- Add pasta and cook for 5 mins
- Stir in beans and cabbage.
- Cook for 5 mins.
- Remove bay leaf
- Stir in pesto and serve with basil leaves and Parmesan.
