APPLE TRAYBAKE
Preheat oven, Electric 180 C / Fan 160 C, Gas 4

- 27x20cm rectangular tin, greased and lined – if you have a slightly larger tin it will be fine but the cake will cook more quickly
Ingredients
- 450 g Bramley Apples
- ½ lemon
- 280 g golden caster sugar
- 225 g soft butter/margarine
- 4 eggs
- 2 tsp vanilla extract
- 350 g SR Flour
- 2 tsp baking powder
- 3 tbsp milk
- 2 tbsp demerara sugar
Instructions
- Peel, core and thinly slice apple, toss in the juice of the half lemon
- Beat butter and sugar until soft
- Add flour, baking powder, eggs and essence.
- Beat until smooth, add milk to ensure ‘dropping consistency’
- Put a thin layer of cake mixture in tin, arrange a layer of apple slices on top
- Spread over a thin layer of cake mixture and then top with apple slices
- Cover with remaining cake mixture and sprinkle with brown sugar
- Bake for 45-50 mins
